Instead, they looked around the six-year-old Jonesy's, which had been decorated "on a shoestring," Jones says, and decided to update the whole space. The restaurant had already gotten a new kitchen floor last year and a walk-in earlier this year; this time, they focused on the dining room. "We worried that part of our charm is because we were a little mismatched," Jones says. "I do pretty well with mismatched, but I think it had gotten to the point where it looked like a yard sale."

So far, she says, the regulars at Jonesy's are sold on the new look. "Everybody felt that we kept the vibe and the look of the space," she says, "even with making everything match."Jones, who's in her second year as president of EatDenver, a local association of independent restaurateurs, made the most of her connections. She found the name of a great floorman from Frank Bonanno, and when Pagliacci's closed, she brought in those booths, "and everything else just really came together," she says.
The changes aren't all physical. Jones says they're thinking about expanding their beer dinners by offering tours, and bigger quarterly beer dinners. "We've always been Colorado beer-centric," she says. "Now we have fourteen beers on tap...we'd like to get into that a little bit more."
