We've been wondering what was going into the old Holiday Theater building on 32nd Avenue and Clay, and now we have at least part of the answer: The bottom floor has been partitioned into three restaurant or retail spots, one of which is under construction and bearing a sign that it will soon become an outpost of a chain of self-serve frozen yogurt shops called Menchie's Frozen Yogurt.

The California-based company, which first started swirling yogurt in 2007, runs 105 franchises across the country and Canada, with five of them already open in Colorado -- and it's aggressively expanding. This shop, like the others, will feature a monster lineup of flavors that, besides chocolate and vanilla, includes maple nut, root beer float and watermelon tart, plus a toppings bar of candy, cookies, fruit and nuts.

And, as is so popular in the frozen yogurt market these days, Menchie's treats are self-serve and pay-by-the-ounce.

This location should open the first week of October.
