"Boulder has a million healthy options," Pigliacamto told Lori Midson in announcing the ModMarket expansion last fall, "and we think that opening in Denver will resonate with diners there, too."
Resonate enough to attract 1,300 during last week's soft opening, according to spokeswoman Dana Pluss Parks.
Unlike the white-on-white Boulder spot, the Denver location -- right by Pinkberry, Tokyo Joe's and the Cheesesteak Connection -- is more colorful, with beetle-kill wood providing the accents.
It's also larger, with a huge tower that can be used for private dining -- something that's tough to organize at the popular Boulder store. But the menu is the same as at the original, with the same seasonal focus. "We went from curry to potato leek soup, for example," Parks says.
