Any vegetarian with a hankering for pho will be very familiar with the fact that most pho restaurants serve their noodles swimming in beef broth, which is the traditional preparation for pho. Thankfully, there are a handful of pho restaurants in the metro area that offer a vegetable broth, too, and Pho on 6th is one of them.

On a recent Sunday afternoon, it was completely empty inside at noon, but couples looking for a place to lunch slowly trickled in the door, one by one, to enjoy the ambiance and the food. It's a beautifully decorated interior, with thick, plushy, velvety seats that are soft enough to nap on, gorgeous paper lanterns on each table and beautiful carved wooden sculptures of Buddhas and peacocks adorning the dining room. The lights are dim, and the music piping out of the speakers is eclectic, moving from club anthems to '70s-rock classics without missing a beat.

The vegetable spring rolls on the menu make a great appetizer; the rolls comprise thin rice noodles and sliced cucumber wrapped in rice paper and served with peanut sauce. Apart from the vegetarian pho, Pho on 6th also serves noodle and rice bowls that are vegetarian- and vegan-friendly. The pho itself is satisfying, too, and there are three ways to order it veggie: with just tofu, with just veggies, or with both. Pictured above is an order of veggie-and-tofu pho. The kitchen uses the typical spring onions, sugar snap peas, carrots and broccoli, with some more unusual surprises thrown in for good measure, like the baby corn, slices of bell pepper, paper-thin zucchini and inch-long pieces of asparagus.
