On Sunday, March 7, Radek Cerny's Full Belly Bistro celebrated its one year anniversary...by changing concepts. The strip mall space, located at 2779 Iris Avenue in Boulder, is now Radex Bistro, a concept, says managing partner Brian Kelly, that's more in tune with what Boulder diners are looking for. The bistro is the second Boulder restaurant for chef Radek Cerny, who's also chef/owner of L'Atelier, 1739 Pearl Street.

"Full Belly was about being a crazy kitchen serving breakfast and lunch, but we couldn't compete with the Boulder Cork, Turley's or the Buff, all well-established places in Boulder," explains Kelly. "Full Belly molded into what Boulder diners are looking for right now -- a classier bistro, a nice lunch and dinner place that's fun and casual."

Between the recent snowstorms and spring break, continues Kelly, the restaurant hasn't seen a huge jump in numbers, but the new concept has been well-received, with 85 percent of diners returning.

The menu hasn't changed much, beyond rotating in some lighter spring dishes in place of a few winter items; there's a new happy hour menu, too. But the real changes are aesthetic: The interior has been completely repainted, with a decorative wall added as well as twenty new lighting fixtures -- at $500 each.

That's when Radex Bistro hosts a three-course wine dinner to benefit There with Care, a local organization that helps families care for children with critical illnesses.
