Saj Mediterranean Grill Rolls Out New Yummer Truck

With more than a foot of snow on the ground, getting stoked for food-truck season may seem a little premature. But it only takes one sunny day before the mobile kitchens are out in force peddling lunch and dinner at every brewery, vacant lot and office park in town. One of the newest is the Yummer Truck, courtesy of Saj Mediterranean Grill, a fast-casual eatery with metro locations at the Streets at Southglenn, the intersection of Parker and Arapahoe roads in Centennial, and at Parker and Iliff Avenue in Aurora — with another that will open soon in Aurora.

Saj operated a smaller food truck called the Saj Express for several years, but it was more of just a tricked-out van. The Yummer Truck is considerably larger, allowing for more fresh-cooked options and a bigger sampling of Saj's menu. 

Michael Holst, special events and catering manager for Saj, is in charge of getting the truck out on the streets. He says the the mobile crew will be offering wraps, plates, Phoenician rice bowls (a signature item), desserts and breads made fresh daily at regularly scheduled events like Food Truck Mondays at the University of Colorado Anschutz Medical Campus as well as at local craft breweries and other spots. In addition to its regular rounds, the Saj Yummer Truck is also available for private events.

Holst notes that founder Ali Awada, who opened the first Saj in 2007, makes healthy eating a priority with his menu. Pita is a well-known Mediterranean staple, but Saj also makes traditional saj bread, which comes in somewhere between flatbread and tortilla in size and texture and is used for wraps, panini and mana-keesh (sort of like a Middle Eastern pizza or quesadilla). Vegan, vegetarian and gluten-free options are also available — at the restaurants and from the truck.
