Eggs -- you think you know them inside and out, but do you know everything they can do? The Seasoned Chef Cooking School is holding a special class starting at 6:30 p.m. to teach students about the versatility of the simple egg. Using science and culinary know-how, you'll learn more advanced techniques for eggs and recipes like souffle roulade and the perfect omelet. The class is $69 a person; visit The Seasoned Chef's site to get a reservation.

And before you can be master of your own kitchen, you've got to get the basics down. At 6 p.m. tonight, Cook Street Culinary Academy is continuing its culinary crash course with part one of Classic Techniques: Sauces. You'll learn not only how to put together a mean bechamel, but how to build a meal around it -- and enjoy a nice dinner afterward, of course. To register for this two-part class, visit the Cook Street page.
