Oaxaca Dinner at Lola
First course: Ancho chile-glazed pork belly with white bean ragout, chicharones and mole rojo, served with Oaxacan Coinstyle (Los Danzantes Silver).
Second course: Pan-seared snapper with poached pear and basil pico, black bean chile poppers and mole blanco, served with Sombra Mezcal.
Third course: Crispy chicken confit with smoked mussel posole, huitlacoche pesto and mole verde, served with a savory Sotol cocktail (featuring Hacienda del Chihuahua Reposado).
Fourth course: Braised short rib pibil with frijoles charros, charred onion relish and mole negro, served with Los Danzantes Reposado.
Fifth course: Dark chocolate tart with chamayo chile caramel and vanilla serrano ice cream, served with Champurrado (Mexican hot chocolate).

Gaetano's Wine Dinner
First course: Citrus and spinach salad tossed with toasted almonds and red onion, served in a Parmesan cup and paired with Tasca d'Almerita Regaleali Bianco 2008.
Second course: Small-shell pasta tossed with lentils, pancetta, leeks and fresh garlic in a dijon balsamic broth, paired with Falesco, Vitiano (cab/merlot/sang blend) 2007.
Third course: Porcini-crusted beef tenderloin served with a shoestring potato cake and a red wine reduction, paired with Allegrini, Palazzo della Torre 2006.
Fourth course: Gelato al limone served with almond biscotti, paired with Limoncello della casa.
