A note on the Torchy's website indicates that despite permitting delays at this location, the Texas taco company has big plans for Colorado:
Construction began last week at the site of this future Torchy’s Tacos location. Hooray! Unfortunately, however, we faced some pretty major delays in getting things rolling, namely with obtaining building permits. We want provide that taco fix every bit as bad as you want, no NEED it. So you can rest assured we’re working hard to get things finished quickly.Torchy's was founded by Michael Rypka, who threw in the towel on a corporate career to focus on street tacos. Nine years later, Rypka runs more than thirty Torchy's stores, but this will be the first outside of Texas. The menu will feature nine breakfast tacos and more than a dozen lunch and dinner varieties stuffed with everything from carnitas and barbacoa to smoked brisket, fried avocado and Jamaican jerk chicken.
Once the building has been remodeled and sufficiently Torchified, we’ll begin hiring, then training. Then it’s party time. We promise, we won’t leave you out of the loop. Our new projected opening date is Winter 2015, with more details to come as we have them.
But that’s not all. Torchy’s Tacos has plans to fire up 10 – 12 locations in Denver and the surrounding area in the next few years. Damn Good things come to those who wait. Thanks for your interest, Taco Junkies. We love you, too!
Homesick Texans don't have much to complain about these days: In addition to Torchy's, Moontower, Fuzzy's and Rusty Taco have all come to town in the past two years.
