Silvana Vukadin-Hoitt, who offers private Turkish coffee readings at her Silvana Mondo antique and art gallery at 4420 Tennyson Street, talked to us last week about her Bosnian heritage and the art of hospitality. Along with inky cups of coffee, Turkish delight, dates and almonds, she served intricate Bosnian pastries filled with savory spinach and cheese. It turns out that she makes the pastries, called zeljanica, stretching dough into thin phyllo, loading it with the cheese and spinach mixture, and coiling it into pans for baking.
We were so intrigued with the technique that Vukadin-Hoitt invited us to help her make a batch. Here's the video, filmed at the Raleigh Street Bakery, owned by David Kaminer, a veteran of Udi's and the Med in Boulder. Kaminer operates his bakery under Colorado's cottage-food regulations and sells his rustic breads from his home on Fridays and Saturdays.
