Ballin' Out With Herb-Infused Chocolate

Amateur chocolatiers joined herbalist and nutritionist Liz Philbrick for a hands-on chocolate-making class at Rebecca's Herbal Apothecary in Boulder on Saturday, December 9. Students learned how to make their own herb-infused chocolate, rolling truffles with rose-hip jam, candied ginger, cocoa butter, coconut flakes and raw cocoa powder, among other ingredients. While cannabis wasn't allowed to be used during the class, it's most definitely an herb and could easily be applied to Philbrick's lessons. This wasn't just a good time for bonbon vivants, either: Attendees also learned a little about the history and benefits of chocolate. All photos by Jacqueline Collins.
