  • Video: Drinking wine with Pete Marczyk of Marczyk Fine Foods

One of the best things about Marczyk Fine Foods, other than the fine foods, is that the shop, at 770 East 17th Avenue, has found a way around the out-dated Colorado blue law that keeps grocery stores from selling full-strength alcohol: the owners have simply opened a liquor store in an adjacent space. But for those who can't always make it down to Marczyk Fine Wines for tastings, owner Pete Marczyk and his crew have started posting online "video tastings", in which they sample of

  • Fine pastries at Marczyk Fine Foods

Just got off the blower with Pete Marczyk at Marczyk Fine Foods, and he passed along a nugget of really good news: As of April 6, the market will be bringing aboard John Hinman -- renowned pastry, pie, cake and cookie guy -- as a full-time staffer. If his name sounds familiar, it should. Hinman's made pastries at Mel's and Vesta, for Dave Query at Jax. As I reported a couple of weeks ago, he was also the guy who (along with his girlfriend, Jayne Yelich) ran the Gelato Spot/Nosh space at 1439 Sout

All aboard! Over the past few months a crew of chefs -- "a band of misfits," as Jamey Fader describes them, as remarkable for their appreciation of each other's work as for their own considerable talents -- have hosted a series of underground dinners for their biggest fans. The third 50 Top, as the dinners are called (the guest list is limited to fifty, and no, you can't beg or bribe your way onto that list), was held on the mezzanine of Union Station. Pete Marczyk, co-owner of Marczyk Fine

Lori MidsonGuanciale, or pork jowlFirst there was candied bacon, then there was corn chowder with salt pork, and now Pete Marczyk has gotten us all in a tizzy over his spaghetti alla carbonara with guanciale. "This pasta dish is considered Roman," Pete says. "It's said to have gained popularity in Italy after World War II, when American soldiers missed their bacon and eggs." Or their pork jowl, in this case; although you can make this carbonara with pancetta, "guanciale is the bomb."
