Baker Steve Scott opened Babettes in the Source two years ago, adding a traditional French boulangerie to the mix of other specialty and artisan food producers in the factory-turned-marketplace. Today a peek behind the burgeoning bread counter reveals an array of flaky croissants, sugar-dusted pastries and rare kouign amann, with stacks of boules, baguettes and other loaves awaiting bread-loving customers. If you hit Babettes at lunch, the shorter demi-baguettes are used in a sandwich that's almost Zen-like its blissful simplicity.

The baguette is the real star of the sandwich, though, made with the same craftsman care as the rest of the breads in the tiny shop. Scott doesn't add yeast to his dough, but rather relies on the levain method, in which natural microflora in the flour slowly develop over time, creating additional flavor as the dough rises. The dough never sees a mechanical mixer and is highly hydrated, giving the finished product an airy, chewy crumb surrounded by a toasty, crackling crust that has about as much in common with a grocery-store loaf as a Bengal tiger has with a fluffy kitten.

For the sandwich itself, there's nothing more than a generous slab of Italian prosciutto and a smear of salted butter from Brittany. The fat of the cured pork melts into the baguette while the tender meat, even though sliced thicker than standard translucent deli prosciutto, doesn't pull out of the sandwich with each bite. The satisfying crunch and chew of the savory torpedo is a complete lunchtime workout — a far cry from limp, insipid subs with little flavor and even less textural contrast. By the time you're done with a Babettes baguette, you really know you've eaten something — and something special, at that.
