No. 6: Chicken and Waffles at Revelry Kitchen
We're not one to jump on a food-trend bandwagon just for the sake of it. Chicken and waffles, a dish that made its way from regional act to national headliner a few years ago, just seemed like two completely different food substances thrown on the same plate more as a publicity tactic than as a natural combination of complementary flavors and textures. Sure, there's a long history of the breakfast/dinner combo plate that has popped up in New York City, the American South and Los Angeles at various points over the last hundred years, but the dish was unknown in most restaurants until recently.

But at Revelry Kitchen, a bright, sunny country-ish establishment in West Highland, chicken and waffles just feel natural — as natural as the Midwestern biscuits topped with Southwestern green chile, the Cubano sandwich and the Mexican churro doughnut holes. Because regional specificity and stunt-food gimmickry are not what makes chef Enrique Socarras's chicken and waffles so alluring; the dish comes alive simply because the food is well made on every level, bringing two disparate ingredients together harmoniously on one plate.

Boneless white and dark meat chicken make fork-and-knife eating easy, allowing bites of chicken to be combined with bites of waffle. The thin, crunchy shell of the chicken and the soft, fluffy waffles (which are gluten-free, by the way) make for a pleasing textural contrast. There's a hint of cumin in the chicken skin and suggestion of heat in the rich, brown gravy, adding lively notes to the juicy meat. A side caddie with syrup and housemade hot sauce allows you to personalize the sweetness and spice. And somehow, gravy, syrup and hot sauce all come together to seamlessly integrate the chicken and waffles.

And that's not a stunt — although it may be a magic trick that will keep us coming back to Revelry for warm breakfast, coffee and hospitality.
