100 Favorite Dishes: Fig n' pig flatbread pizza from Encore

Number 54: Fig n' Pig Flatbread Pizza from Encore

Those people you see hanging out by the door, their feet shifting impatiently, their jaws moving up and down, mimicking the eating motion? Those people have either already had the fig n' pig flatbread pizza from Encore and, as a result, are having the kind of withdrawal symptoms that can only come from too much time away from the ambrosial combination of pigs and figs, or they've heard about the pig with the fig and are clamoring for inclusion into the coveted pig and fig society, which Encore doesn't have, but should. Chef Paul Reilly's fries -- "The Fries" -- have already snagged a coveted spot on our favorite dish list, and now he's snatched two spots, all thanks to that pizza, a properly charred oval paved with a fig spread that's pelted with crumbles of Gorgonzola, sheeted with tarps of salty prosciutto and forested with bright arugula leaves. It's dishes like this, that make us squeal with gratitude.
