Chef-restaurateur Michael Shiell was out of the Denver culinary scene for more than a decade, but with Milk & Honey, which opened in Larimer Square two months ago, he's back with a swank and understated subterranean eatery that feels both edgy and elegant, like a secret club for savvy Denverites not fooled by current food fads.

What's neither secret nor clubby is Milk & Honey's bar, where walk-ins are welcome and the full dinner menu is available for the asking — along with a long wine list and some clever cocktails with ingredients that read like an apothecary's shopping list. A list of small plates — labeled simply "bites" — goes well with drinks of any kind, and a stand-out on that list is a small, rectangular tray of three foie gras spheres with just enough sweetness to earn the description bonbons.

Chef de cuisine Lance Barto uses a couple of fanciful twists to coax surprising flavor and texture from the bite-sized morsels. The bonbons themselves are made with a foie gras mousseline, giving the already rich liver a silky smooth texture. The mousseline balls are rolled in a fine cashew crumble before getting dunked in liquid nitrogen. The cashew crust fuses into a tissue-thin, crackling layer of brittle that gives way to the cool center — with a texture somewhere between butter and custard. Each bite rests in a dark pool of cherry syrup, which balances the subtle, meaty flavor of the foie. It's almost a dessert, but with enough savory oomph to push it past a mere sweet trifle. And at $12, it's a more opulent snack than the price would suggest.
