Although it may feel as if Brussels sprouts have had enough time in the spotlight, they still grace most New American menus. But at Stoic & Genuine, chef Gabe Wyman's version will have you falling in love with this vegetable all over again. After all, Wyman uses housemade kimchi to give these little green balls an umami punch and spicy kick, making them oh-so-tasty and completely addictive.

Wyman first roasts the heck out his Brussels sprouts, softening the stiff bulbs until they are pliable while still maintaining a pleasing crunch. As soon as they come out of the oven, he tosses them in puréed kimchi, S&G's version of the pungent Korean condiment, which ferments for weeks in the restaurant's kitchen. Adding more standout flavor is a creamy sunchoke and coconut veloute, an innovative take on the velvety French classic. A smear of this nutty, pearl-hued sauce hides under the bright-green sprouts, an unassuming component that cuts the rich tang of the kimchi and adds sweetness to balance out the saltiness. The inspiration for this addition, says Wyman, was years of working with Stoic & Genuine chef/co-owner Jennifer Jasinski, who taught him about veloute in the first place.

"It's something that stuck in my memory," the chef explains. "I like how the natural sugars in the sunchoke play with the other flavors."

Unfortunately, these beauties won't be on the menu for too long; Brussels sprouts are a seasonal vegetable. But Wyman assures us that even if the side dish doesn't survive the onslaught of spring and summer's bounty, you can expect to see it again.

"That dish sells really well," he notes, "and when dishes do really well here, I tend to bring them back the next season." Still, look for them on the menu right now and order a plate or two to go with the restaurant's ultra-fresh (and also seasonal) seafood. You may never look at Brussels sprouts the same way again.
