Menudo, as everyone knows, is the catch-all cure-all for a Sunday morning hangover, but after one mouthful of the lamb posole at Encore, the self-proclaimed "country club in Colfax," you might reconsider your allegiance to tripe. The posole, which is only available on chef Paul Reilly's brunch menu, is a dark, dark stew endowed with hominy, profoundly fragrant with the sweet heat of chiles and herbs and pungent with the in-your-face, don't-screw-with-me pungency of braised lamb. It's roofed with scrambled eggs -- soft, creamy, perfect canary-colored eggs -- and arrives, as every posole should, with the required accompaniments. Add a squeeze or three of lime juice, a fistful of jalapeno coins and sliced radishes, cilantro leaves and Mexican queso, and you'll understand why Encore snapped up our Best of Denver 2012 award for the city's Best Brunch.
