At Que Bueno Suerte on South Pearl Street, chef Vicente Sosa, a native of the Yucatán, has added several items from his home territory to a menu balanced between upscale culinary creations and homey dishes from the chef's childhood. Tacos are one of the greatest inventions in the vast world of food, but in the Yucatán, the basic configuration of tortilla and filling gets a boost from a hidden surprise. By spreading a thin layer of black-bean purée inside the housemade tortilla, Sosa turns a standard taco into a Yucatecan panucho.

Once stuffed, the tortilla is lightly fried to crisp the edges while keeping the center tender and flexible. A mouthwatering mound of chicken tinga  — a tangy, smoky preparation that combines tomato and chipotle chiles — tops the panucho, along with pickled red onions (another specialty of the Yucatan), fresh lettuce and creamy avocado.

You can pick up the panucho and fold it like a taco, but the fillings are heaped high, so a fork is a better option to keep from making a mess. Sosa's panuchos are a great starter — spicy enough to stimulate the appetite without killing the tastebuds — for a long, satisfying dinner of plates from well beyond the standard canon of Denver Mexican cooking.
