Renee LaLonde started her food truck, Bakin' Bakery, through a Kickstarter campaign in early 2014 and has been peddling a range of sweet and savory baked goods — with a judicious dose of bacon — around the city for the past year. The mobile bakery has made a name for itself with fluffy doughnuts slathered in fresh and fun glazes (you can actually see the pureed fruit in the strawberry glaze and even the sprinkles are homemade). But since some of LaLonde's favorite stops — Wit's End Brewing and Grandma's House — are breweries, the savory offerings on the menu make for perfect brew-and-bacon pairings. The rotating list features the likes of pulled-pork empanadas, pierogies with international fillings, and peach and bacon skillet pizza, with all meats sourced from Western Daughters Butcher Shoppe.
Our favorite is the prosciutto pop tart, because it features both bakin' and bacon. Light and crispy rectangles of puff pastry, egg-washed and baked to a glossy brown, embrace a generous mound of julienned prosciutto and smoky bacon. These aren't your typical sugary pop tarts with a cardboard-flavored crust, but instead are fresh and buttery and filled with pork goodness. A side of brown gravy for dunking gives the pastries added country charm, a homey touch in the urban food truck scene.
Bakin' Bakery's menu changes frequently, but keep an eye on LaLonde's Twitter feed for locations and menus (and maybe a few photos of her adorable Bernese mountain dog, Vern). Bakin' Bakery is taking a break this weekend but will be back on Denver streets after April 15. On a crisp spring evening, a locally made stout in one hand and a prosciutto pop tart in the other is a soul-warming way to usher in the food truck season.
