No. 44: Raw carrot salad from Ambria
It's not often that I'm transported by raw greens, and I don't believe I've ever uttered the words, "Hey! Let's go out for a salad!" but of all the weeds I've sucked this year -- and come to think of it, last year, too -- none have moved me like the raw carrot salad from Ambria, a lovely restaurant on the unlovely 16th Street Mall quarterbacked by chef Jeremy Kittelson. The stark white plate, stained with celery root pesto, and bolstered by a glistening forest of ideally matched flavors -- frisée, slivers of bright orange carrots, dabs of creamy Gorgonzola and Spanish marcona almonds -- that dance across your tongue like sunlight surging across the tree tops, is judiciously dressed with a softly acidic champagne vinaigrette. A plea to Kittelson: Do Not. Ever. Take. This. Off. The. Menu. Please and thank you.
