The humble potato takes many forms in the culinary world, but the best results come from simple and straightforward techniques: boiling and mashing, baking or best of all, frying. French fries never go out of fashion (or fail to please, when done right), but recent years have seen a surge of tater tots on bar and restaurant menus, many so heaped with toppings that the thimble-sized crisps are virtually lost. The Highland Tavern, though, prefers the Zen-like simplicity of unadorned tots presented for pure potato pleasure. 

Don't call them tater tots, though; at this funky hillside bar in LoHi, they're known as Tavern tots. And they're not the perfect cylinders of spuds you're used to from childhood dinners in front of the TV. Highland Tavern's tots are irregular and round-ish and look almost like shredded wheat, with a crisped outer layer of finely shredded potato surrounding a soft and creamy interior.

They come with a side of bleu cheese or ranch dressing, but they hardly need accompaniment. Rather than a full on dunk, go with the lightest dip possible to get the most of the potato flavor. Or better yet, order them with some of the kitchen's confit chicken wings slathered in spicy K-Town Korean chile glaze and dab a little of the sauce from the wings onto your tots for a fusion-cuisine  menu hack.
