Friday lunch in Boulder features a completely different array of options from what you'd find in Denver. The compact city tucked up against the foothills has a reputation for crunchy offerings along the lines of vegan nibbles and organic everything, but there's also a college-kid component that keeps things grounded and a fine-dining scene fueled by the landed gentry who can actually afford to own property there. Now specialty food market Cured has found the perfect lunch to appeal to all comers — and it's only available on Fridays.

The pretzel dawg certainly seems like frat-boy chow at first glance; it's a fat, pink dog barely held at bay by a burnished wrapper of salt-speckled bread. But Cured isn't about to pawn off inferior meat scraps tainted with chemicals to its discerning patrons; instead, the tube steak of choice is a juicy frank from Tender Belly, an uncured sausage made from Berkshire pork with no nitrates or nitrites added. It's a rich, faintly smokey frank with just the right amount of pop.

The yeast-risen portion of the equation comes courtesy of Boulder's Das Pretzel Foundry, which coils thin layers of dough around the franks and bakes them to a gorgeous mahogany. Cured crisps the whole package in a sandwich press and sides it with a Real Dill pickle and house mustard.

And because you're in Boulder, the perfect beverage pairing is a dry, refreshing Living Ginger kombucha from Rowdy Mermaid — also sold at Cured.
