No. 46: Xiao Long Bao from Lao Wang Noodle House
It doesn't matter the time of day, or the day of the week. Every day that Lao Wang Noodle House is open (it's shuttered on Monday) is a day to thank the Shanghai food lords for granting us mere mortals the pleasure of swelling our paunches with xiao long bao, sealed spheres filled with minced pork and tongue-scalding juice that dribbles down your chin. The plump, perfumed narcotics, served ten to a steamer, jiggle and wiggle, but unlike a lot of xiao long bao that seep liquid before they meet your mouth, these resist leakage until you're ready to bite. Puddle your spoon with white vinegar and chile paste, pass the suckers through your lips and pray that heaven delivers these on a sliver platter upon gate entry.
