Gretchen Kurtz tracked down busy chef Paul Reilly of Beast + Bottle for a conversation about his upcoming new restaurant, Coperta, which will be the second restaurant operated by the chef and his sister, Aileen. Beast + Bottle, no one-trick piggy, also made Linnea Covington's list of the ten best gluten-free menus in Denver.
