In just a few weeks, spirit hounds from here and afar will descend on Denver for DSTILL, a week-long celebration that trumpets more than fifty craft spirits producers from Colorado and around the country, all of whom will gather under the roof of the McNichols Civic Center building on Thursday, March 13, for DSTILL's signature tasting event, the Showcase, which gives consumers the opportunity to sample and sip artisan spirits from America's top craft distillers.
But the Showcase is just one of the main attractions of DSTILL, which also pairs liquid assets with education through a series of workshops, tours and panel discussions, all of which focus on American small-batch distilling. The educational part of DSTILL kicks off on Tuesday, March 11, with a panel discussion at the Wynkoop Brewery centered around the relationship between distiller and bartender. Moderated by Geoff Van Dyke, editorial director of 5280 magazine, the discussion, which runs from 5:30 to 8:30 p.m., also includes classic cocktails from the Colorado Bartenders Guild, along with light bites. Tickets are $30 per person.
On Wednesday, March 12, from 7 to 9 p.m., DSTILL will host a rum workshop at TAG; spirit tastings, cocktail samples and chef-distiller pairings are included in the $60 ticket price. A whiskey-centric workshop takes place that same night at Ste. Ellie from 7 to 9 p.m.; tickets to that are also $60. And a gin workshop, which will unfold at Session Kitchen, also from 7 to 9 p.m., is $65 per person.
In addition, there's a progressive distillery tour in Boulder that stretches from 3 to 6 p.m. on Monday, March 10 and explores three distilleries, beginning at Roundhouse Spirits. A second Denver tour, which kicks off at 8:30 p.m. on Tuesday, March 11, at either Lola or Jax, downtown (your choice), is a progressive craft cocktail tour, where participants can purchase $5 cocktails from participating distillers and the Angelshare program, a local endeavor that connects six distilleries with six bars and restaurants in an effort to form collaborative partnerships and create thematic cocktails made with local spirits.
