Dishes of DISH: Interstate's watermelon salad
On Sunday, September 22, DISH will dish out food and drinks from dozens of Cafe Society's favorite restaurants and trucks, as well as Best of Denver readers' winners, in the Sculpture Park at the Denver Performing Arts Complex. Interstate Kitchen & Bar will park in the park for the afternoon, and keep the summer vibe going with a refreshing watermelon arugula salad courtesy of chef/owner Andre Lobato.
The salad is tossed in a parsley vinaigrette with tumeric pickled onions and toasted pistachio, topped with housemade cheese curd and finished with Hawaiian salt and fresh cracked pepper.
Interstate specializes in Americana dishes keeps its menu seasonal. Since the restaurant is transitioning to its fall menu right now, DISH could be your last chance to sample the watermelon salad this year.
