My favorite fall activity is taking my dog on "leaf walks" in the mountains, spending cool afternoons collecting red and gold specimens for no reason other than that they're pretty. Down in the flatlands, McCormick's Fish House & Bar has come up with another way to celebrate Colorado's gorgeous fall foliage: the Aspen Leaf Martini. Made with Absolut Vanilla, DeKuyper Sour Apple Pucker and DiSaronno Amaretto, the Aspen Leaf Martini ($7.50) -- which actually has a light-green tint -- is the perfect combination of tart apple and sweet sugar tastes. It comes with the shaker on the side, for extra sipping -- one of the amenities that make McCormick's a bar for all seasons. Housed in the corner of LoDo's historic Oxford Hotel, which celebrates its 112th birthday next week, McCormick's mixes old-school cool with relaxed service. And no matter what the season, the best time to hit this LoDo institution is between 3 and 6 p.m. and after 9 p.m. on weekdays (10 p.m. on weekends), when the happy-hour bar menu features delicious eats -- including a full-sized cheeseburger and fries -- for $1.95. Think early evening snacking or late-night drunken noshing. But think about it before the end of the month, when the tasty Aspen Leaf will fall off the bar's roster.
