Early Bird Restaurant opening this week in Westminster
The Early Bird garden will provide fresh herbs and vegetables.
The couple has created a seasonal menu that focuses on organic ingredients. "We noticed that the restaurants that aren't adopting this organic movement are really the breakfast places," explains chef/owner Daniel Cofrades. "In this economy, we found we can serve good ingredients, especially being in Colorado, and none of the profit is billed to the consumer. We can compete with other breakfast places."
Not only is the kitchen using quality ingredients, but it's using them in creative ways. Natural eggs are featured in a specialty omelet called the "Riser," Daniel says, "because we incorporate a lot of air into the mix of eggs."
The kitchen also offers a brownie with toasted almonds that just happens to be gluten-free. "Before it was 'gluten-free,' it was a really good brownie," Daniel promises. "It was designed to give you the best brownie, and then it just happened to be gluten-free. People will not believe you when you say it's a gluten-free brownie."
Early Bird's employees share the couple's passion. "From the dishwasher to the culinary staff, we want people who are as interested in cooking and as invested as we are," Daniel says. "We hire culinary students and graduates from Johnson & Wales University."
The owners hope to open the restaurant tomorrow, but they might have to wait until Thursday. Once Early Bird is open, the hours will be 6:30 a.m. to 3 p.m. Monday through Friday, and 7 a.m. to 3 p.m. on weekends.
The Cofradeses want customers to eat as well as they do.
