The Bistro at Stapleton opened yesterday in a neighborhood hungry for dining options. Chef and GM Cristino Griego, who worked in Italy and France, hopes to recreate a European bistro with an emphasis on both local and international products in the dining room and attached market. The bar features eleven local and imported beers, classic cocktails and a wine list created by in-house sommelier Carl Brotsker.
