Here, at this Chinese restaurant, I've learned that going with a chef definitely has its advantages. These clams -- God, they were fresh -- aren't on the menu, but the owner, who sensed immediately what the chef in residence wanted to eat, delivered the best the kitchen had to offer in abundance.
