Now that fall is at our doorstep, restaurants all over the city are autumn-izing their menus, which means that butternut squash is popping up here, there, and in the salad in the above pic, where the sweet, silky nubs are bolstered by thicket of arugula, patches of lamb belly, quinoa and wild mushrooms.
