Guess where I'm eating larb, laab, lahb or laap?
There are numerous spellings for this fiery and tart toasted rice salad that's a daily staple in Isan, a rural area of Thailand that borders on Laos, the birthplace of larb, laab, lahb or laap, but no matter how you spell it, the intensely aromatic flavors of dried ground chiles, fish sauce, fresh lime juice, raw red onions, curls of scallions and mint leaves result in a pungent playground of tastes, elevated, in this case by crumbles of ground pork.
