HuHot Expands Into Fast Casual Market With Upcoming NuHu Mongolian Express

HuHot Mongolian Grill started in Missoula, Montana more than fifteen years ago and has been stirring up Asian-inspired meals at three metro-area locations for the past several years. Now the company is jumping into the fast-casual game, with a new concept called NuHu Mongolian Express, slated to open in the Golden Triangle on February 12. Similar to HuHot, customers at NuHu will be able to select from a multitude of fresh ingredients and houses sauces, but will be able to point, order and receive their food after it's cooked in front of them by one of NuHu's "grill warriors."

Jeff Martin, chief operations officer for NuHu, says the new eatery will take the fast-casual approach one step further than the competition by offering guests fresh options, rather than food that has been pre-cooked and held in steam tables, so that the food never leaves the customer's sight, even as it's being cooked. Menu options include chicken, pork, tofu, shrimp and beef -- the last two at a slightly higher price point -- as well as eight signature sauces (all gluten-free) and four noodle styles (also including gluten-free options).

With over fifteen different vegetable choices, combinations are almost limitless, so for those who may feel a little overwhelmed, NuHu will also offer several signature bowls with flavors inspired by Japan, Korea, Thailand and China. "We can accommodate most dietary needs," adds Martin, "including vegetarian, gluten-free and paleo."

Martin says the name HuHot comes from the capital city of Inner Mongolia, so NuHu is simply the new version of HuHot. Although HuHot was started in Montana, NuHu's corporate headquarters are here in Denver and Martin adds that it was a natural choice to launch the brand here. "With our restaurant support center located in Denver, we are excited to introduce the first NuHu restaurant to the people who live in our own community," he notes.

Bowls will range in price from $6.99 to $8.99 and will include roti flatbread and a toppings bar where guests can accessorize their bowls. NuHu opens February 12 at 11 a.m. and will be open daily until 9 p.m.
