The opening of Pasquini's new Denver Tech Center restaurant at 8101 Belleview Avenue has been pushed back more than a month while it secures all the necessary permits and brings the space up to code, says founder Tony Pasquini. The pizzeria, which will be the fifth to join the mini-chain, was originally scheduled to have opened earlier this month. "From everything that I know, we'll be open by the end of May," he says.

As for plans to open additional franchises, Pasquini warns that the future is a bit less certain. The Denver Business Journal reported earlier this year that the company wanted to double the number of restaurants by the end of 2010, but while Pasquini's is an affordable dining option, franchisees are finding it tough to get loans, Pasquini admits.
Pasquini says he is exploring another location on East Colfax Avenue, in the vicinity of Park Hill, but that's the only potential restaurant in the works at this point.
