Photos: Zanitas opens with Mexican grub and margaritas in south Denver

Zanitas Mexican and Margaritas, which originally opened in Boulder in August of last year -- and then shuttered just four months later -- is back in business, this time in south Denver, right off I-25 and Hampden in a new retail and restaurant development that also includes a Smashburger.
The Tex-Mex, fast-casual joint, which also flaunts a bar with frozen (and fresh-squeezed) margaritas on the rocks, unlocked its doors last week, unleashing a menu of tacos -- chicken, steak, shrimp, fried avocado and even a mac-and-cheese taco -- toasted burritos, salads and salsas, all of which are vegetarian and gluten-free. "Zanitas is the evolution of fast-casual and fresh-casual Mexican food," says owner Nick Hayes. "Our focus and motivation is to serve a compelling mix of high-quality, craveable items at reasonable prices," he adds. The restaurant just happens to dish out excellent red and green chile, too, both of which are vegetarian and walloped with bold flavors and enough heat to melt asphalt.
Open for lunch and dinner daily, Zanitas also features grab-and-go breakfast burritos for $2.99. Here's a look at the space and a sampling of the dishes.
