After months of anticipation, Mizu Izakaya is nearly ready to open. This spot on the corner of Boulder and 16th reflects the sensibilities of an izakaya (a Japanese gastropub) in its enormous bar and cocktail program, with an impressive sake list, as well as its small plates. But Mizu also has a raw bar, where sushi and sashimi will add an elegant, modern twist. All photos by Lindsey Bartlett.
