There are few pleasures in life as satisfying as sitting down with a good friend and a bottle of wine, maybe sharing a snack. Before the weather gets too cold to enjoy this pleasure in the truly great outdoors, do yourself a favor and head to Flights Wine Cafe in Morrison, which has a gorgeous patio for catching the changing colors, an extensive wine menu -- and several vegetarian-friendly options on the small-plates lineup.
Weekends are busy at the cafe, with couples, groups of friends and families stopping by to soak up some sun on their way through town as they head to Red Rocks or just out hiking. On a recent Friday afternoon, there was almost no space left on the sunny patio, but we somehow managed to snag a spot, order a bottle of Malbec and pair it with a few delicious snacks.
Pictured above is the bruschetta, with olives, artichokes, tomatoes and shredded parmesan (vegans can opt out of the parm garnish) served up on crunchy toasted bread and generously drizzled with olive oil. The savory veggies pair nicely with the baked bread -- and it's always smart to consume some carbs and fat to help absorb that wine in your stomach.
The mixed-olive selection is another good choice, with green and Kalamata olives among the mix. But if you're hungry, you'll want to pair it with a more robust offering from the menu.
As the name indicates, Flights specializes in wine flights -- and you can also get hummus and flatbread flights, or even a cheese plate specially arranged by the chef to pair with your wines. (Many of those options are vegetarian-friendly, though vegans will have a tougher time finding a match.) There are also large salads, and even a chef's carving plate for the carnivores in your group.
