There are two Denver outposts of the eatery, one on the 16th Street Mall and one in the Streets at SouthGlenn. That location was attracting a lot of families one recent Monday, although there's also a wide range of domestic microbrews on tap for discerning adults.
And this particular Mellow Mushroom is accommodating in other ways, too. For example, it offers tofu as a meat replacement. Pictured above is the Thai Dyed pizza, with vegan cheese, curried tofu, red onion, tomato, basil and a sweet Thai chili sauce. Although fans of Thai-style pizzas will enjoy this effort, traditionalists might want to steer clear. Fortunately, there's also a vegan-friendly Mediterranean-style wrap on the SouthGlenn location's menu.
Vegetarians have more choices. The Red Potato pizza is a lot like a baked potato in pie form, with red potato slices, mozzarella, chives, sour cream and a spicy ranch drizzle. If you eat cheese, the Muffuletta cheese bread (made with a delicious three-olive tapenade) is an excellent choice for an opener; the olives and crusty French bread are an irresistible combination.Several of the specialty pizzas are adaptable to plant-based diets, and there's also a build-your-own menu option.
