After fifteen years of parties on the rooftop patio and turning out Italian cuisine to Boulderites, Bácaro Venetian Taverna is closing its doors on March 4, following one final bash. "I purchased the restaurant earlier this year, not to keep it Bácaro, which was owned by an Italian chef -- and I'm not an Italian chef -- but so I could change the concept," says owner Chris Holston, who bought Bácaro from original proprietor Corrado Fasano, who also operates (and will continue to operate) PastaVino, another Italian restaurant on Boulder's Pearl Street Mall.
In the spring of this year, most likely in April, Holston will reopen Bácaro as a new restaurant, although he's keeping the concept close to his chest pending construction progress on the west end of Pearl Street, where there are numerous building projects in the works. "We have the name, we have the concept and we have the personnel and management, but we're keeping everything under wraps, just because there are so many construction projects on the west end of Pearl, and we know that the construction will have an impact of what will take place with our restaurant," he says, noting, too, that the space, at some point, will undergo extensive renovations. "We don't know how much of it will be done by the time we open; it's still a gray area as we wait for the city to start construction," he adds.
In the meantime, Bácaro will remain open throughout the month of February and for the first few days in March, until March 4, when it hosts one final hurrah: a Mardi Gras/Fat Tuesday celebration. And starting tomorrow, the restaurant is offering 15 percent off all restaurant and bar purchases, excluding happy hour and other special discounts. "Bácaro has been a staple in Boulder for fifteen years, and we thought we'd give the community the opportunity to come and say their last goodbyes -- and offer some great discounts throughout our final month in business," explains Holston.
And Holston, who worked in the health club industry for the past twenty years, says he's excited about the forthcoming changes. "I love the location of Bacaro, and I'm looking forward to adding to the high quality of the restaurants in Boulder and on Pearl Street, specifically," he concludes.
