A permit application has been posted in the front window of Frasca Food and Wine, 1738 Pearl Street, for some time now, indicating the Boulder restaurant's plans to erect restaurant or retail square footage in the empty space next to their existing dining room. The permanent modification and liquor license hearing with the city of Boulder was scheduled for June 16, and this week, it looks like construction has begun; a crew in hard hats was visibly gutting the interior through open doors.
There's no official word on what one of Colorado's most-watched restaurants plans to put there yet, and whether it'll be something entirely new or just a build-out of the current 16-table space remains to be seen.
Word on the street is, though, that one of Frasca's sous chefs, Jordan Wallace, was recently spied learning the ropes of the wood-fired oven at Pizzeria Basta -- and is currently enjoying an extended stay in Italy to continue his education. Probably a pretty good bet, then, that he'll be applying that knowledge at home.
