As for plans to open additional franchises, Pasquini warns that the future is a bit less certain. The Denver Business Journal reported earlier this year that the company wanted to double the number of restaurants by the end of 2010, but while Pasquini's is an affordable dining option, franchisees are finding it tough to get loans, Pasquini admits.
Pasquini says he is exploring another location on East Colfax Avenue, in the vicinity of Park Hill, but that's the only potential restaurant in the works at this point.
