Grabbing lunch to go is easy for most meat-eaters: No matter where you stop in, there's bound to be something on the menu that looks good. Not so for vegetarians and vegans. Sure, most places offer up at least one veggie-friendly dish ... but if you're not a big fan of portabello mushrooms or grilled eggplant, you're outta luck more often than not.
But at Parsley, you'll feel plenty lucky. Almost half of the sandwiches here are vegetarian-friendly, with modifications available for vegans, and the salads and juices go far above and beyond traditional "rabbit food" fare.
A few workers were doing some post-project tidying when we stopped into this very green (both figuratively and literally) restaurant for lunch Monday.
Parsley offers a seven-grain bread, but the recommended bread for all of its sandwiches is the City Bakery ciabatta you see in the photo above. Parsley uses as much organic produce as possible, and there was quite a bit on the Tree Hugger sandwich we tried, including organic cucumber, lettuce and spinach. We eschewed the fresh mozzarella (delicious though it might be) and instead asked for some creaminess in the form of fresh avocado, which was sliced in delicate, thin strips, dusted with salt and black pepper, and arranged on the sandwich, alongside some sweet red peppers. A balsamic vinaigrette gave the entire sandwich a delicious, tangy undertone.
We felt a little guilty for ordering a sandwich when Parsley has so many amazing salads to offer, so we offset that guilt with a sixteen-ounce serving of the Shades of Green juice, a fresh blend of organic spinach, organic celery, organic cucumber and apples. The apple gave just the right note of sweetness to the rest of the juice, which was frothy on top and beautifully mixed below. It really was like a salad in juice form.
Parsley has a full spread of juices and fruit smoothies, as well as many more sandwiches we're eager to try. We might even go for one of those salads someday.
