To celebrate Colorado Architecture Month, the state chapter of the American Institute of Architects has paired up with local chefs for the Delicious Design program, creating desserts inspired by specific buildings in Colorado.

Thursday's dessert was from Steuben's, Friday's featured design from Carelli's in Boulder, and today? Root Down, located at 1600 West 33rd Avenue.

Pastry Chef: Christina Cowan Architect: Ted Schultz, AIA Firm: Agency CTA Dessert Run Dates: Through April 30 Dessert: Cinnamon-Scented Chocolate Panna Cotta, blood orange and mango sauces, almond caramel craquant. Structure Represented: Based on the Colorado Monument/Rifle Gap Curtain created by artists Christo and Jean Claude.
