No. 53: Pork shop from Le Grand Bistro & Oyster Bar
You can say what you will about pork, but if it were to disappear from Denver restaurant menus, there would most surely be a rebellion, and because of my preoccupation with pig, I'd likely be the one to lead it. Pork makes all sorts of showings on the menu at Le Grand Bistro & Oyster Bar, Robert Thompson's shrine to Francophiles, and while some might argue that a pork chop is a pork chop is a pork chop, the pork chop at Le Grand, my latest obsession with pig consumption, is the king of chops, a thick slab of ballerina pink flesh, brined in juniper berries, maple sugar and salt, swathed in a blue cheese fondue and resting on a jumble of haricot verts. After just one bite, it becomes your god.
