Z Living TV may be the ESPN Ocho of food channels, but the healthy-lifestyle network (formerly Veria Living) is giving some national attention to a couple of Denver-area restaurants. Ace and the Kitchen in Boulder will both be featured on the Z Living's Good Food America, a travel show hosted by chef Danny Boome that showcases healthy food across the country.
Ace owner Josh Wolkon and executive chef Brandon Biederman will be featured on an episode airing at 2 p.m. Sunday, November 2, on Z Living. Biederman presents two dishes: turmeric grilled chicken and tofu bao buns. "I was definitely surprised," says the chef of the show's decision to highlight Ace, "but it's always great when it happens." He's not surprised, though, that Ace was selected for its healthy menu, pointing to the eatery's juice bar as an example of the restaurant's dedication to good food.
"We take classic Asian dishes that people are familiar with," he adds, "and make them with healthier ingredients." The chicken dish that will be featured on the show has evolved since the filming back in March; it's now a Thai grilled airline breast marinated in fish sauce -- Biederman prefers Red Boat brand -- and Thai bird chiles that's served with a green papaya salad.
The Kitchen's episode is scheduled to air on December 21 and features Kyle Mendenhall, executive chef at the Kitchen, and chef Colton Wagner of the Kitchen Next Door, who present a winter squash dish and Farmer John's wheat berries.
"As a father, chef and educator, it is my goal to bring awareness to the tasty, nutritious eats being served in all the great cities around the US," says host Boome of the show's mission.
