Novo Opens Its Third Coffeehouse Today in West Highland

River North coffee roaster Novo opened its latest coffeehouse at 3617 West 32nd Avenue in West Highland this morning after a weekend of soft openings. This is the third cafe in Denver for Novo; the other two are on the 16th Street Mall and at East Sixth Avenue and Gilpin Street. The newest location is primarily a coffee bar, with minimal seating inside and a small selection of pastries, although a garage door at the front of the cafe and an attachedl patio increase capacity considerably when the weather is nice.

In additional to standard coffee and espresso drinks, the new location  offers pour-over and nitro cold brew coffee, a growing trend in the artisan coffee world. Novo's version is cold-brewed for twenty hours before being kegged and poured on tap using 100 percent nitrogen for a creamy head. Upstart Kombucha and other teas are also available.

Jake Brodsky and his father, Herb, have run Novo since founding the company in 2002; they've opened and closed several retail branches over the years, including spots in Arvada and at the Denver Art Museum. The new location will be open daily from 6:30 a.m. to 8 p.m. "The soft opening went well," says Jake Brodsky. "We kept things quiet, but there's lots of foot traffic in the area."

Closing hours may change this summer, once the coffeehouse gets a liquor license that allows it to serve wine and beer on tap. The downtown location already has a liquor license and Novo has also applied for a license for the Sixth Avenue cafe. Beers on tap will include Epic Brewing, Renegade Brewing and Ratio Beerworks.
