Since June 2015, Sunshine Bowls has been serving breakfast from a food truck on the streets of Denver. Frequenting spots like The Big Wonderful and the Highland Square Farmers' Market, owner Ryan Keuter is now serving fans of his healthy acai bowls inside Caveau Wine Bar, at 450 East 17th Avenue.

The food truck will still be rolling around the city, but Keuter is excited to have a slightly more permanent location. He’s looking into eventually getting his own storefront, but for now, he's thankful for his relationship with Caveau and for being able to use the space in the mornings. Keuter started Sunshine Bowls shortly after moving to Colorado from California, where he saw dozens of acai places and thought Colorado would also fall in love with the nutrition-packed treat.
So what is an acai bowl? Keuter explains that the Brazilian acai berry is blended together with other fruit into a purée and topped with granola and fresh fruit. The acai berry is naturally high in omega-3 and -6 fatty acids as well as B vitamins. When blended, the mixture has a frozen-yogurt-like consistency and is best consumed immediately. Sunshine Bowls also serves a pitaya (dragon fruit) bowl, which is more tart than acai and also contains plenty of B vitamins.

Keuter serves four different flavors in two sizes; a mini bowl is $5 to $6, and a regular bowl is $8 to $9. The most popular bowl is the Pow-Pow, a mixture of acai, bananas, strawberries, blueberries, peanut butter and coconut milk topped with granola, fresh banana, blueberries, strawberries and cacao nibs.

For now, Sunshine Bowls will be open at Caveau Monday through Friday from 7 a.m. to 1 p.m. You can also follow the food truck on Instagram to see where it will be hanging out.
