On Sunday, August 14, Westword will host Tacolandia, a celebration of the city's street tacos in all their tortilla-wrapped glory. Join us from 4 to 7 p.m. at Sports Authority Field to enjoy unlimited samples from more than forty of Denver's top taquerias, cantinas, Mexican restaurants and food trucks, presented by Estrella Jalisco. Here's what Ursula's Taqueria will be serving:
Korean Pig Tacos: These fusion tacos are made with braised sweet ginger pork, cucumber, pickled red onion, cilantro-lime cabbage, toasted sesame seeds and serrano chiles.
"Passion is the key to being successful when creating food," says Ursula's Taqueria, a mobile operation founded by Colt Varney, an executive chef with more than seventeen years of culinary experience to his name. His dream was to open a food truck and eventually a restaurant where "a legacy of all his hard work and dedication could carry on and be something that his four daughters, wife, family and friends could cherish, not just now but forever."
