First Look: Zoes Kitchen Opens Today at Union Station

Zoës Kitchen, a fast-casual Mediterran concept, keeps expanding its fleet in Colorado. A Union Station North neighborhood location opens today, August 24, at 1970 15th Street, suite 120; this will be the first Zoës in Denver proper and the fourth in the state, following locations in Littleton, Fort Collins and Westminster that paved the way earlier this year. (This is the 192nd spot in the nation.)

The Union Station North area is still under construction, with several apartment buildings as well as additional parking coming in this increasingly busy spot. But even with the cone zone, a steady flow of pedestrians walk by the new Zoës on their way to downtown, and the staff is hoping that by next summer, this will be a fully realized neighborhood. 

Zoës is known best for its preservative-free menu, with big salads and a great hummus; regulars recommend the Liv Med salad, the spinach-and-mushroom Piadina, or the pesto hummus. 

The space is bright, the food is prepped fresh every day, and the overall organization one that other fast-casual spots might want to emulate. High ceilings and a blood-orange cruiser parked out front will welcome customers on the inaugural day.
